कॅरट केक (Vegan Carrot Cake)
माझ्या काकुने मला दिलेली ही एक माझी आवडती रेसिपी. तिने जशी दिलि तशिच इथे लिहितेय. मी बरेचदा साधी कणिक घालुनच हा केक करते. अतिशय चविष्ट लागतो. एक दिवसाचा शिळा खाल्ला तर अतिशय छान!
Vegan Carrot Cake
1 cup Oil or Melted butter
2 cups Brown Sugar
¾ cup Water or Milk
4 cups All-purpose flour or atta
2 teaspoon Baking Powder
3 teaspoon Baking soda
1 tablespoon Vinegar
1 teaspoon salt
1 teaspoon Cinnamon powder
½ teaspoon Cardamom powder
¼ teaspoon Nutmeg
3 cups Shredded carrots
1 cup Chopped Nuts
½ cup Raisins
Preheat oven at 350F.
Blend oil, sugar, and water well. Add vinegar.
Mix thoroughly flour, salt, baking powder, baking soda and spices.
Fold in the both above mixes and stir vigorously.
Gently fold in carrots, nuts and raisins.
Bake in a well greased 13x9 pan or bundt pan for 35-40 minutes
Note - To make vegan version, use oil and water.

ReplyDeleteYes Priya, Vinegar is essential. This recipe doesn't call for eggs and to make the cake fluffy Baking Soda is added. to activate the baking soda it will need some acid. Here Vinegar provides that.

ReplyDeleteAnon, 9x9 is bit smaller for the proportion but I make muffins from the remaining batter.
